Waffles with Blueberry Thyme Syrup
You can turn our pancake mixes into waffles by adding one simple ingredient: whipped egg whites! This blueberry thyme syrup will have your tastebuds singing.

What You'll Need

2 cups of Pancake Mix (Purple Barley or White Sonora Pancake Mix)

2 egg whites, beaten to form stiff peaks

1 1/2 cups water

8 tablespoons butter, melted

Blueberry Thyme Syrup

12 ounces blueberries (approx 3 cups)

2 tablespoons sugar

1/2 tablespoon chopped fresh thyme leaves

Directions

  1. Beat egg whites with a stand or hand mixer until they form soft peaks.

  2. Add 1 1/2 cups water and melted butter to the Purple Barley Pancake Mix and stir until combined. Then gently fold in the egg whites, careful not to over mix.

  3. Spoon 1/4 cup batter into a preheated waffle iron.

  4. Cook until golden and crisp.

Blueberry Thyme Syrup

  1. Add blueberries, sugar and thyme to a small sauce pan and head over medium heat.

  2. Simmer for 15 minutes.

  3. Spoon over warm waffles and enjoy!
